I think your idea is good. I’ve been doing this a while too. But some picking are flaw. I’d starting thinking about writer which really are from the place. For example, for Portugal, I would choose Saramago and Brazil there are: Machado de Assis, Jorge Amado. Also for Argentina: Borges and so on…

You could add a novel “Memoirs of a Geisha” written by Arthur Golden. It is set in Japan, and tells the story of a young girl, who is sold by her impoverished family to be a geisha. The book is captivating and beautifully written.
